The assignment: a gin that tells the story of CTCS

CTCS, led by CEO Ronald Visser, specializes in herbs, spices, and food ingredients. For partners and clients, CTCS wanted to develop a special gift that would be more than just a standard token of appreciation.

The request to NewSpirits was clear: develop a craft London Dry Gin in a striking bottle with high-quality packaging. The gin was to serve as an exclusive corporate gift, but also as a promotion of the spices that CTCS works with daily.

The process began with the careful selection and precise preparation of the botanicals. Each spice has its own specific function in the final flavor profile of the gin. While some ingredients provide a lively freshness, others bring warmth, deep spiciness, body, or a long, elegant finish.

The juniper berry forms the classic base of the gin. Coriander, cardamom, lemongrass, and galangal bring a refreshing, aromatic tension in the glass. Exotic pepper varieties such as cubeb, Lampung, and white Muntok pepper give the spirit a pleasant dryness, strength, and a fiery spicy finish. Warm spices like cassia, Ceylon cinnamon, nutmeg, mace, clove, and star anise finally provide a deep, velvety roundness.

Prior to the maceration all botanicals were weighed with utmost precision. Where necessary, the spices were artisanally crushed and prepared, so that the rich aromas and essential oils could be optimally released during the distillation process.


Juniper forms the classic base. Coriander, cardamom, lemongrass, and galangal bring freshness and aromatic tension. Pepper varieties such as cubeb, Lampung, and white Muntok pepper provide dryness, power, and a spicy finish. Warm spices including cassia, Ceylon cinnamon, nutmeg, mace, cloves, and star anise provide depth and roundness.

For the maceration, the botanicals were carefully weighed. Where necessary, spices were lightly crushed or prepared to ensure the aromas could be more effectively released during the process.


Maceration: Optimally releasing aromas from the spices

During the maceration, the selected botanicals are soaked in pure alcohol. The alcohol extracts the essential fragrance and flavor compounds from the spices, forming the flavorful base for the later distillate.

In this specific CTCS gin, the maceration was an extremely critical step. After all, the drink contains very powerful spices with a pronounced character. Too little extraction would yield a flat result, while too long a maceration would make the gin too heavy or overwhelmingly spicy.

The goal was therefore a perfectly controlled maceration: maximum strength and complexity, but with the desired balance, freshness, and drinkability preserved.

Maceration: releasing aromas from the spices

During maceration, the botanicals are placed in alcohol. The alcohol extracts aroma and flavor compounds from the spices and forms the basis for
the later distillate.

In this CTCS gin, maceration was an important step. The gin contains powerful spices with a lot of character. Too little extraction would result in a flat
result. Too much extraction could make the gin heavy or too spicy.

The goal was therefore a controlled maceration: enough strength and complexity, but maintaining balance, freshness, and drinkability.


 

Distillation: the heart of the gin


After the maceration, the alcohol including the botanicals was distilled. During heating in the copper still, the alcohol and volatile aromas evaporate. These vapors are then cooled and collected as a pure distillate.

In artisanal distillation, everything revolves around selecting the right 'heart' of the run. The heads contain unwanted, volatile components, and the tails often have too heavy notes. Only the heart contains the pure, aromatic core of the gin. For this London Dry Gin, this resulted in a clear and dry distillate where juniper, coriander, cardamom, lemongrass, peppers, and warm spices beautifully come together.

 



Resting, diluting, and filtering


After distillation, the gin was given ample time to rest. This is an essential step, as the aromas need to further integrate after the distillation process. Sharp edges become softer, and the different spices merge into one harmonious whole.

Then the gin was gradually brought back to the desired alcohol percentage with pure water. This is also an extremely precise operation; the dilution directly affects the aroma, taste, mouthfeel, and clarity. The gin was then carefully filtered. This filtration ensures a crystal-clear end product without taking away the unique character of the botanicals.

 

Bottling and finishing


After the final approval of the flavor profile, the gin was professionally bottled in the selected designer bottle. This was followed by finishing touches with the custom label, the cap, the sealing, and the luxury gift packaging.

In this final phase, the overall concept came together perfectly. The bottle and the packaging had to radiate exactly the same top quality as the gin itself. In artisanal distillation, everything revolves around selecting the heart of the distillation. The "heads" (voorloop) contain unwanted volatile components, while the "tails" (naloop) often carry heavy, unpleasant tones. Only the heart contains the pure, aromatic core of the gin.

For this London Dry Gin, that resulted in a clear and dry distillate in which juniper, coriander, cardamom, lemongrass, pepper, and warm spices come together beautifully.

 

Resting, diluting, and filtering

After distillation, the gin was given time to rest. This is a crucial step, as it allows the aromas to further integrate. Sharp edges soften, and the various spices harmonize, resulting in a more balanced and cohesive flavor profile.

Afterward, the gin was brought down to the desired alcohol percentage with water. This is also a precise step; dilution directly influences the aroma, flavor, mouthfeel, and clarity of the spirit.

Next, the gin was filtered. Filtration ensures a pure and clear end product, without unnecessarily removing the character of the botanicals.

 

Bottling and finishing

After approval of the flavor profile, the gin was bottled in the chosen bottle. Then came the label, cap, sealing, and gift packaging.

In this phase, the entire concept came together. The bottle and packaging had to radiate the same level of quality as the gin itself. The final product needed to feel premium, serve as a fitting corporate gift, and be immediately recognizable as a meticulously developed project by CTCS, NewSpirits, and Brouwhoeve.
